Mazza is a well-known restaurant with six branches found in the corners of Metro Manila. They offer a wide set of food variations but they focus on innovating shawarma. Popular Middle Eastern street cuisine known as shawarma has since spread to many other regions of the world. On a vertical spit, the meat is slowly roasted, allowing the fat to drop off and preserving the meat’s moisture and flavor. After that, the cooked meat is scraped off the spit and placed in a pita or a wrap along with some veggies.
